tasty tuesday

good morning all! i have decided to add a new feature to my blog each tuesday where i will share a new recipe. hence the title 'tasty tuesday'. in addition to my affinity for fashion, interior design, and all things pretty has blossomed a love for cooking.

after tying the knot a little over two years ago i decided it was time to tackle the wifely duties and test the theory that the way to a man's heart is through his stomach. it's at least partly true i have concluded. :] i have enjoyed experimenting in the kitchen over the past two years and look forward to sharing some of my favorite tried and true recipes from cocktails to crockpots.


1 LB boneless, skinless chicken breasts cut in bite size cubes

3 cloves garlic, minced

1-2 tsp curry powder

1 - 14oz can regular coconut milk

1 - 4oz can diced green chiles

1 lime, zest and juice

1/4 cup green onion, chopped

2 tbsp fresh cilantro, chopped


heat the oil in a large skillet over medium heat. add the chicken and garlic and cook until golden brown on all sides. (about 5 minutes, stirring frequently.)




add the curry powder and cook, stirring for 1 minute. add the coconut milk, chiles, lime juice and zest, bring to a simmer. let simmer for 5 minutes or until the chicken is cooked through. season with salt and pepper. remove from heat, stir in green onions and cilantro. serve over basmati rice.

*note: i used light coconut milk in an effort to cut calories, and although it was delicious i suggest using regular coconut milk. i think it would make the sauce more rich and creamy.
